Keto Peppermint Chocolate Cookies

Ingredients:

  • 3 large eggs, room temperature
  • 1/3 cup Carrington Farms Organic Ghee
  • 3/4 cup granulated keto sweetener
  • 2 tbsp milk, room temperature 
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp peppermint extract 
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup Carrington Farms Gluten Free Flour with Fiber
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup keto mini marshmallows
  • 1 cup keto white chocolate baking chips

Directions:

  1. Preheat the oven to 325°F and prepare a baking sheet with parchment paper or silicone baking mat.
  2. To a large bowl add the eggs, Carrington Farms Organic Ghee, granulated keto sweetener, and milk. Whisk until well combined.
  3. Next, add the vanilla and peppermint extract and whisk again.
  4. To the bowl, add cocoa powder, Carrington Farms Gluten Free Flour with Fiber, baking powder, and salt. Whisk until all of the dry bits are absorbed.
  5. Switching to a spatula, fold in the keto mini marshmallows and keto white chocolate chips.
  6. Using a cookie scoop or large spoon, spoon evenly sized cookie batter onto the prepared baking sheet.
  7. Bake at 325°F for 10-12 minutes then allow to cool before serving.
