BEET & GOAT CHEESE LUPIN SALAD from wholesomely_hannah


  • 1 cup Carrington Farms Ground Lupin Bean
  • 2 tbsp cold-pressed, unrefined flax oil
  • juice from ½ of a lime
  • 2 medium-sized pre-steamed beets
  • ½ cup crumbled goat cheese
  • 2 tbsp finely chopped fresh parsley
  • ¼ tsp Himalayan pink salt
  • ½ tsp dried oregano
  • ⅛ tsp black pepper


  1. Combine the ground lupin with 1 1/3 cups water and a dash of pink salt in a microwave-safe bowl. Microwave for 3 minutes, fluff with a fork, and set aside.
  2. Slice the beets into cubes and finely chop the fresh parsley, then set aside. In a small dish whisk the flax oil, lime juice, salt, pepper, and oregano.
  3. Toss the cooked lupin and flax oil mixture with a fork. Stir in the beets, goat cheese, and fresh parsley.
  4. Serve warm OR cover & store the salad in the fridge to serve cold.
