Beet Root Cake

Ingredients for Cake

  • ½ cup vegetable oil
  • ½ cup coconut sugar
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla
  • ½ tsp salt
  • 2 Tbsp Carrington Farms Beet Root Powder
  • 2 cups flour
  • 2 tsp baking powder
  • ¾ cup buttermilk
  • 2 – 8½ inch round cake pans
  • Carrington Farms Organic Ghee (to grease the cake pans)


  1. Preheat the oven to 350 degrees. Grease the cake pans with the Carrington Farms Organic Ghee.
  2. Cream the oil, sugar, eggs, vanilla, salt and Carrington Farms Beet Root Powder together until mixed thoroughly.
  3. Add the flour and baking powder. Mix on low and slowly add the buttermilk until blended together.
  4. Spoon batter into the cake pans, filling each halfway. Bake in the oven for about 30 minutes or until an inserted toothpick comes out clean.
    Makes 2 8 1/2 in round cakes.

    When cakes have cooled completely, frost with the recipe below or buy a ready to use frosting in the flavor of your choice.

    No frosting? Not a problem. Enjoy these delicious cakes cut into squares with a scoop of your favorite ice cream. (My preferred way to enjoy this)

Optional: Frosting

Ingredients for Frosting

  • 1 ½ cups Carrington Farms’ ghee
  • 2 teaspoons vanilla
  • Pinch of salt
  • ½ cup cocoa powder
  • 3 cups confectioners sugar
  • ⅓ cup whole cream


  1. Mix the ghee, vanilla, salt and cocoa powder until combined. Add the confectioners sugar.
  2. Scrape down the sides of the bowl and continue to combine. Add the whole cream and whip
  3. together until soft and airy.
  4. Frost the cakes as desired
