Breakfast Lupin “Oat”meal

Breakfast Lupin “Oat”meal

Ingredients

  • 1 cup Carrington Farm Ground Lupin Bean
  • 2 cups unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1/8 teaspoon salt

Directions

  1. In a small saucepan, add lupin over medium heat and lightly toast it, (about 1 min)
  2. Stir in almond milk, maple syrup, and salt; bring to a boil. Reduce heat to a simmer, cover and cook until quinoa is tender and liquid is absorbed, 3 minutes
  3. Remove from heat and allow mixture to set for 5 more minutes. (drain off any excess liquid)
  4. Fluff the Lupin with a fork. Divide into four bowls and serve as you would oatmeal with fruits and toppings of your choice.
