Chickpea Pizza

Ingredients

  • 1 cup Carrington Farms Chickpea Flour with Za’atar
  • 5 tbsp Carrington Farms Coconut & Olive Cooking Oil Blend, divided
  • ¼ cup Tapioca Flour
  • ¾ cup Warm Water
  • 1 tsp Salt
  • 1 cup Pizza Sauce
  • 1 cup Shredded Mozzarella Cheese
  • ¼ cup Parmesan Cheese, grated
  • Fresh Basil, for garnish

Directions

  1. Place a 10-inch cast iron or heavy bottom skillet into the oven and preheat to 450°F.
  2. In a large bowl combine Carrington Farms Chickpea Flour with Za’atar, 3 tbsp Carrington Farms Coconut & Olive Cooking Oil Blend, tapioca flour, warm water, and salt. Let chickpea flour pizza dough sit on the counter for 5 minutes to thicken.
  3. Remove hot skillet from oven, pour in 2 tbsp Carrington Farms Coconut & Olive Cooking Oil Blend and immediately add the chickpea flour pizza dough. Spread dough evenly, creating a border at the edges, then prick all over with a fork to keep dough from bubbling (docking dough).
  4. Place skillet back into oven and bake 12-15 minutes, until the edges are golden brown and crispy.
  5. Remove the crust from the oven, top with pizza sauce, shredded mozzarella cheese and bake for 10-12 minutes or until the cheese has melted.
  6. Remove pizza from oven and let cool for 3 minutes before carefully lifting the pizza out onto a cutting board. Garnish with freshly grated parmesan cheese, fresh basil leaves, slice and serve.
