Fabulous Freekeh Pancakes

Fabulous Freekeh Pancakes

Makes 4 pancakes

Ingredients

Freekeh Batter:

  • 1/2 cup Carrington Farms’ Freekeh flour
  • 1/2 cup water
  • 1 Tbsp Carrington Farms’ Liquid Coconut Oil Unflavored
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp Carrington Farms’ honeysuckle powder
  • 1 tsp honey

Optional Protein & Fiber Add-In

Cooked Freekeh:

  • 1 1/4 cup water
  • 1/2 cup freekeh grain

Instructions

  1. Combine all the batter ingredients into a bowl and mix together well.
  2. *For Optional Protein & Fiber Add-in: Add freekeh grain and water to a pot and bring to a boil. Once boiling, let simmer for about 25 minutes. When freekeh is done, spill out any remaining water and set aside to cool. Once cool add into the freekeh batter
  3. Spray a sauté pan with Carrington Farms’ Coconut oil spray and, over medium heat, add the mixture to the pan and flatten into a pancake shape.  Repeat 3 more times until all the batter has been used. Cook about 3 minutes or until the pancakes are solid. Flip over and cook the other side the same way.

Once the pancakes are done, enjoy plain  or top with Carrington Farms’ coconut spreads (available in chocolate, vanilla or cinnamon)
