Fig and Caramelized Onion Flatbread

Fig and Caramelized Onion Flatbread:



2 medium Vidalia Onions

2 tbsp Carrington Farms Coconut oil

1 large 10 oz Flatbread (11 ½ inch)

Crumbled Goat Cheese

2 cups Fresh Arugula

5 Fresh Figs, Sliced

Carrington Farms Argan Oil



  1. Place a large skillet over medium/low heat and melt the coconut oil. Preheat your oven to 450 degrees.
  2. Add thinly sliced onions to the pan and stir to coat with oil. Check and stir the onions every 5-10 minutes until golden brown and remove from the heat.
  3. Scatter the onions evenly over the flatbread and sprinkle 2 tbsp of goat cheese on top.
  4. Reduce oven heat to 425 degrees. Bake the flatbread on a baking sheet for 12 minutes until crisp.
  5. Remove the flatbread and cool slightly. Toss arugula with Argan oil and top the flatbread with arugula and sliced figs. Add desired amount of additional goat cheese.
  6. Slice and Enjoy!
