Garlic Shrimp Salad by Sandy



  1. Add 2 tbsp of Carrington Farms Coconut & Olive cooking oil to the pan on medium heat.
  2. Add minced garlic cloves and chopped parsley to pan for approximately 2-3 minutes, stirring occasionally.
  3. Throw the shrimps in the pan and add salt, to taste.
  4. Mix shrimps, garlic, and parsley in the pan and allow to cook until shrimps turn pink, set heat on low and add in cherry tomatoes and stir with other ingredients while cooking, allow to cook for about 1 minute.
  5. Throw the arugula into a bowl, dump all ingredients from the pan over the arugula and add diced avocado. Drizzle with Carrington Farms pumpkin seed oil & enjoy!
