Grilled Portobello Mushrooms



  • 2 Tbsp balsamic vinegar
  • 2 Tbsp Carrington Farms Coconut & Olive Cooking Oil Blend
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • ½ tsp kosher salt


  • 4 large portobello mushroom caps
  • Carrington Farms Coconut Oil Cooking Spray


  1. In a small bowl, whisk together the marinade ingredients.
  2. Gently twist off the stem of each mushroom. Holding the mushroom cap upside down in one hand, use a spoon to gently scrape away the gills from the underside of the mushroom.
  3. Wipe the mushrooms clean with a damp paper towel.
  4. Brush the underside (gill side) of the mushroom with the marinade.
  5. Heat the grill to medium heat. (Alternatively, preheat grill pan to medium heat).
  6. Spray the grill (or grill pan) with Carrington Farms Coconut Oil Cooking Spray.
  7. Place the mushrooms, underside down, on the grill. Press gently to flatten.
  8. Grill 5 minutes.
  9. While the underside is grilling, brush the tops of the mushrooms with the marinade.
  10. Flip the mushrooms (top side down). Grill 4-5 minutes, until browned and tender. Serve immediately.
