Healthy and Delicious Banana Bread

  • 2 extra large eggs
  • 1/3 cup buttermilk
  • 1/2 cup Carrington Farms organic flax cooking oil
  • 1 cup of mashed bananas (about 2 1/2 medium sized bananas)
  • 1 tsp vanilla
  • 1 1/2 cups white sugar
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 loaf pans (I like the paper loaf pans because they are ready to use and do not need to be pregreased)


  • Preheat oven to 325 degrees. If using regular loaf pans, spray with Carrington Farms Coconut Oil Cooking Spray to coat.
  • Combine eggs, buttermilk, oil, mashed bananas and vanilla in a medium bowl.
  • In another bowl, add the sugar, flour, baking soda, and salt.
  • Sift the dry ingredients into the banana mixture. Add cinnamon and mix well, making sure nothing is sticking to the sides or bottom of the bowl.
  • Pour the mixture into 2 loaf pans filling each halfway, leaving room for it to rise.
  • Bake for 1 hour 20 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
