Makes: 4 sandwiches
Prep Time: 30 minutes, plus rising time
Cook Time: 1 hour


Ingredients: 

For the keto bread: 

For the sandwiches: 

  • 3-4 tomatoes, 
  • 8 oz fresh mozzarella
  • 1-2 sprigs fresh basil leaves
  • 4 tbsp balsamic vinegar

Directions: 

  1. Make the Carrington Farms Keto Bread according to package instructions. 
  2. Slice the bread into pieces 1/2” thick and heat 1-2 tbsp of Carrington Farms Organic Ghee.
  3. Grill the bread for 2-3 minutes on each side until golden brown and crispy. Set aside. 
  4. Slice tomatoes and mozzarella cheese into thick slices. 
  5. To make each sandwich, arrange tomatoes in a single layer, topped with a layer of mozzarella cheese, 2-3 large basil leaves, and a drizzle of balsamic vinegar. Serve immediately.
