Lupin Carrot Cake


  • 1 ¼ cups Ground Lupin Bean
  • 2 large carrots, grated
  • ⅓ cup Flour
  • ⅓ cup brown sugar
  • ½ cup maple syrup
  • 3 eggs
  • ¾ cups Carrington Farms Coconut Cooking Oil
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking sods


  • 8 oz softened cream cheese
  • ½ cup icing sugar
  • ½ tsp vanilla extract
  • Zest of lemon


  1. Preheat oven to 350F. Grease a 8 in round cake pan lightly with oil and line with non-stick baking paper.
  2. Blend the Lupin, flour, baking soda, and cinnamon in a large mixing bowl.
  3. Put the brown sugar, oil, maple syrup, vanilla and eggs in a separate bowl and whisk to mix until combined.
  4. Pour the oil mix into the dry ingredients and stir in gently until just combined, then add the grated carrot and mix again gently.
  5. Pour the mixture into the cake pan and bake for 1 hour. Set aside for at least 10 minutes, before carefully turning out onto a wire rack to cool completely.
  6. To make the icing, place the cream cheese, icing sugar, vanilla and lemon zest in a bowl, mix with either a wooden spoon or hand mixer until well combined.
  7. Spread icing over the cake.
