Lupin with Mushrooms, Onions and Peas

Ingredients

  • 1 Tbsp Carrington Farms Liquid Coconut Oil
  • 1 clove garlic, minced
  • ½ cup diced onions
  • 5 oz shitake mushrooms
  • ½ cup peas
  • 3 cups chicken broth
  • 2 cups water
  • 7 oz Carrington Farms Plain Ground Lupin Bean
  • ½ cup grated Romano cheese
  • ½ Tbsp Italian seasoning
  • Salt and pepper to taste

Directions

  1. Add Carrington Farms Liquid Coconut Oil to a large pot over medium high heat. Add minced garlic and onions, stir until onions are translucent.
  2. Add the shitake mushrooms and cook for about 3 minutes until soft.
  3. Add the chicken broth and the water and bring to a boil.
  4. Once boiling, add Carrington Farms Ground Lupin Bean and peas and cook for about 3 minutes.
  5. Drain using a mesh colander and press out excess liquid through colander with a wooden spoon.
  6. Add Romano cheese and Italian seasoning. Mix well.
  7. Salt and pepper as desired
