Mandel Bread


  • 3 large eggs
  • ¾ cup sugar
  • 1 cup Carrington Farms Liquid Coconut Cooking Oil
  • 1 tsp baking powder
  • 2 ¼ cups Carrington Farms Cassava Flour
  • ¼ tsp salt
  • 1 tsp vanilla
  • Carrington Farms Ghee Cooking Spray
  • 1 heaping cup of chocolate chips
  • Cinnamon and light brown sugar, to taste


  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, beat together the eggs and sugar then add Liquid Coconut Oil and mix well
  3. Add vanilla and chocolate chips to the wet mixture. Set aside.
  4. In a medium sized mixing bowl, combine baking powder, Cassava flour, and salt.
  5. Slowly add the dry ingredients to the wet ingredients while mixing with a wooden spoon until it forms a soft dough.
  6. Coat the cookie sheet with the Ghee Cooking Spray.
  7. Using a rubber spatula, place the dough on the coated cookie sheet forming a loaf
  8. Sprinkle the top with cinnamon and sugar, as desired.
  9. Bake for 45 minutes until golden brown.
  10. Let cool for 10-15 minutes. Cut down the center lengthwise and then into biscotti-like slices.
