Mediterranean Couscous Salad


For the Salad

  • 2 Packs Carrington Farms Ground Lupin Bean
  • 1 Cucumber
  • 3 Bell Peppers - red, yellow and green
  • ½ Large red onion
  • 1 Cup cherry tomatoes
  • ½ Cup flat leaf italian parsley
  • Crumbled Feta cheese
  • 1 Lemon

For the Dressing

  • ¼ Cup red wine vinegar
  • ½ Cup Carrington Farms Coconut and Olive Oil Blend
  • 1 Tbsp freshly squeezed lemon juice
  • 1 Tsp minced garlic
  • 1 Tsp dried oregano
  • ½ Tsp Dijon mustard
  • Sea salt and pepper


  1. Heat the Lupin beals according to pack instructions.
  2. Coarsely chop the cucumber, peppers, red onion and cherry tomatoes, and finely chop the parsley.
  3. Prepare the dressing by adding all of the ingredients to a mason jar and shake well.
  4. Add the Lupin beans to a large bowl and allow to cool, then toss in all of the veggies, crumble in some feta cheese and add freshly squeezed lemon, salt and pepper to taste.
  5. Drizzle each serving with dressing, not the whole salad.
