  • 1 ½ cups Carrington Farms Organic Cassava Flour
  • ¼ cup Tera’s Organic Vanilla Whey Protein
  • ¼ cup Carrington Farms Liquid Coconut Cooking Oil
  • 3 Tbsp Carrington Farms Organic Chia Seeds
  • 1 Tbsp maple syrup
  • 1 tsp salt
  • 2 ¼ tsp double acting baking powder
  • Carrington Farms Organic Coconut Flour
  • 8 x 3 ⅞ loaf pan, fully coated in liquid coconut oil and coconut flour


  1. Preheat oven to 400 degrees.
  2. In a small bowl, mix the chia seeds with 9 Tbsp water. Set aside for about 5-15 minutes until it gels.
  3. In a separate bowl, dissolve maple syrup into ¼ cup of hot water. While the mixture is still very warm, mix in baking powder, allowing it to get frothy.
  4. Combine Cassava flour, protein powder and salt in a mixing bowl. Set aside.
  5. Add liquid coconut oil to gelled chia mixture and mix together.
  6. Combine chia mixture, baking powder mixture, and ½ cup of water. Add this to the bowl of dry ingredients and mix well. Let stand about 5 minutes to firm up to a texture between a batter and a dough.
  7. Oil the loaf pan and then flour, using the coconut flour, making sure the bottom and sides are oiled and floured well.
  8. Using a spatula, put the bread mixture into the loaf pan, making sure it’s spread throughout, evenly.
  9. Sprinkle plenty of coconut flour on top of the loaf to prevent burning of the top before the loaf is adequately baked. Using a butter knife, put 3 shallow slits down the length of the loaf.
  10. Cover with a towel and let rest for 35 minutes. After 35 minutes, bake in preheated oven for about 45 minutes, until top is slightly golden and inside is fully cooked.
  11. Let cool before serving. Cut into slices. Enjoy alone or with your favorite spread or jam.
