Pumpkin Pie Bites

Ingredients for the crust:

Ingredients for the filling:

  • 1 tsp baking powder
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • ½ cup Carrington Farms’ Cassava Flour
  • ½ cup sugar
  • 1 cup canned pumpkin
  • 1 cup almond milk
  • 2 tsp Carrington Farms Xanthan Gum
  • ½ cup dark chocolate baking chips (optional)


  1. Preheat oven to 350F.
  2. Spray muffin tin with Carrington Farms Ghee Spray.
  3. In a medium mixing bowl, combine crust ingredients with a mixer or by hand.
  4. Once well mixed, place about a tablespoon of crust in each muffin tin hole, pulling the crust mixture up and around the sides of the hole.
  5. Once all the crust mixture has been placed in the tin, bake for about 15 minutes.
  6. Mix together filling ingredients. Then add about 2 teaspoons of filling to each crust. Don’t overfill or it’ll be hard to get out of the tin.
  7. Bake at 350 degrees for about another 10 minutes.
  8. Let cool completely before removing from tin.
  9. Serve as is, or with a whipped cream topping. Yum!
