Coconut-Flax Granola

Place 2 tbsp Carrington Farms organic roasted flax seeds in a small bowl with a sprinkle of ground cinnamon, a tiny splash of vanilla extract and a small amount of water – just enough to stir it all up.

Place covered bowl in fridge for a couple of hours or overnight.

On a parchment-lined baking pan sprayed with Carrington Farms coconut oil cooking spray, spread flax seeds and sprinkle unsweetened dried coconut on top.

Optional: drizzle with a little bit of honey.

Bake at 350 degrees for about 5 minutes or just until golden brown and barely crisp.

It is so aromatic and absolutely delicious on top of this parfait!
