Garlic Cilantro Fries

Ingredients

2 red potatoes

2 Tbsp Carrington Farms garlic flavor coconut oil

ground coriander, to taste

salt, to taste

Directions

1. Scrub and peel potatoes. Cut each potato into 1/4 inch slices, then cut each slice into matchstick size pieces.

2. Heat Carrington Farms garlic flavored coconut oil over medium-high heat for about 2 minutes. Drop a piece of potato into the oil- you will know it is ready when it sizzles.

3. Place potatoes in the oil in a single layer. Fry for about 5 minutes, or until golden crispy, turning halfway.

4. Prepare a shallow dish with a paper towel. Season with ground coriander and salt, to taste, as soon as you take the fries out and onto the paper towel.

5. Sprinkle chopped cilantro over fries and enjoy with your favorite dip.
