Huevos Rancheros (Mexican eggs)



Heat Carrington Farms garlic flavored liquid coconut cooking oil in a small frying pan over medium heat. Fry one tortilla at a time, cooking both sides just until golden brown.

Carefully crack one egg over the center of the tortilla and allow the whites to semi-set before gently flipping the tortilla over. Gently roll the pan around to make sure the egg is coated with the oil. Remove egg tortilla as soon as the yolk is cooked to your liking. Repeat.

This is the only cooking oil you don’t want to waste so feel free to drizzle any remaining oil over eggs once you’re done.

Garnish as pictured or with your favorite Mexican toppings (queso fresco, cream, salsa, onion, etc.)
