Sweet Potato Coconut Latkes

Sweet Potato Coconut Latkes





1. Place all of the ingredients (except for the Coconut Oil) in a bowl and mix.

2. Heat a large skillet and melt enough coconut oil to fully coat the bottom. Be generous with the oil for frying.

3. Once the oil is hot, drop tablespoonfuls of sweet potato mixture and press down into pancakes. Cook for 3 to 4 minutes a side; latkes should be golden and crisp on both sides.

4. Put the latkes on a paper towel to soak up some oil.

5. Continue to add more oil until all the sweet potato mixture has been fried.


***If you want less coconut flavor, fry in Carrington Farms Unflavored Coconut Cooking Oil instead.
