Cook Time: 30 minutes

Ingredients: 

Directions:

  1. Heat Carrington Farms Coconut and Avocado Cooking Oil Blend  in a large pot over medium heat. When the oil is hot, add the onion, garlic, and bell pepper. Cook for 3-4 minutes, just until the onions and peppers begin to soften. 
  2. Add the taco seasoning, salt, pepper, diced tomatoes, black beans, corn, and rotisserie chicken. Stir to combine. Add the chicken stock and bring to a simmer.
  3. Simmer, stirring occasionally, for 25-30 min. until the soup has thickened slightly and flavors have melted. Taste and season with salt and pepper if needed. 

To serve, top each bowl of soup with Carrington Farms Organic Crounons Cracked Pepper and Sea Salt, sliced avocado, and fresh cilantro, if desired.
