Superfood Christmas Sugar Cookies

For the cookies

For the frosting



To make the cookies: 

  1. In a large bowl, whisk together almond flour, Carrington Farms Organic Coconut Flour, baking soda, and salt. 
  2. In another large bowl, combine melted Carrington Farms Organic Ghee, sugar, honey, eggs, and vanilla. Whisk until smooth. 
  3. Gradually add the dry ingredients to the bowl with the wet ingredients and fold in using a rubber spatula. Continue to stir until no dry spots remain and a soft dough has formed. 
  4. Wrap the dough in plastic wrap and chill overnight, or for at least 1 hour. 
  5. When you are ready to bake, preheat the oven to 350° F.
  6. Remove the cold dough from the refrigerator, divide it in half, and place half on a sheet of parchment paper, dusting it with coconut flour if needed to prevent sticking. (Re-wrap the remaining half of dough and refrigerate until you’re ready to use it.) Dust the top with a little more coconut flour and roll the dough into a large rectangle about 1/4” in thickness.
  7. Use Christmas cookie cutters to punch out shapes, and transfer the cookies to a parchment lined baking sheet. *Repeat with the rest of the dough*. 
  8. Bake for 7-9 minutes until the edges are lightly golden brown. Let the cookies cool on the pan. Recipe adapted from Ambitious Kitchen

To make the frostings: 

  1. In a large bowl, melt the Carrington Farms Organic Ghee. 
  2. Whisk in the powdered sugar until the frosting is smooth and spreadable. 
  3. Divide the frosting into three bowls. In one bowl, whisk in 1/2 tsp of Carrington Farms Matcha Powder and in another, whisk in 1/2 tsp Carrington Farms Beetroot Powder. Leave the third bowl of frosting white.
  4. Decorate cookies with frostings as desired and then let set for about 10 minutes, until frosting is firm. 

*If at any point, the frostings become too thick, microwave them for about 10 seconds and whisk again until thinned and smooth.
