BBQ Lupin Meatballs
This bite-sized recipe is protein-packed, and they sneak in the added benefit of being high-fiber from our Ground Lupin Bean in place of traditional breadcrumbs.
Ingredients:
- 1 small shallot, finely diced
- 2 cloves of garlic, grated
- 1 lb ground beef
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1 ¼ tsp kosher salt
- 1 egg
- 1/4 cup Carrington Farms Plain Ground Lupin Bean, cooked
- 2 tbsp Carrington Farms Organic Ghee
- 1 cup BBQ sauce
- 3-4 green onions, chopped
Directions:

In a large bowl, gently stir together the first 7 ingredients just until everything is well combined. Scoop mixture into 2 teaspoon sized portions and roll them into meatballs. Place on a plate or lined baking sheet.

Heat Carrington Farms Organic Ghee in a large saucepan set over medium heat. When the ghee is hot, place meatballs in a single layer on the bottom of the pan, working in batches if needed. Cook meatballs for 5-7 minutes, flipping occasionally until deeply browned on all sides. Remove the meatballs from the pan and repeat with the remaining meatballs.

When all of the meatballs have been browned, strain off half of the oil and return the pan to the heat. Add the bbq sauce to the pan and use a spoon to scrape up all of the browned bits on the bottom of the pan.

Add the meatballs back to the pan with the bbq sauce and bring to a simmer. Cook for 10-15 minutes, until sauce is bubbly and meatballs are cooked through.

Garnish with chopped green onions and serve warm.
