Carrington Farms Birthday Cake
Ingredients:
CAKE:
- 2 flax eggs ( 4 tbsp of Carrington Farms Organic Milled Flax Seeds and 8 tbsp water)
- 1 cup Carrington Farms Organic Coconut Oil
- 1 1/2 cup coconut sugar
- 3 1/3 cups Carrington Farms Organic Cassava Flour
- 2 cup milk
- 4 scoops simply tera’s organic whey protein, plain unsweetened
- 2 teaspoon baking soda
- 2 teaspoons vanilla extract
- 2 tsp turmeric for coloring
- 2 tsp apple cider vinegar
FROSTING:
- 1 cup Carrington Farms Organic Ghee
- 1 cup unsalted butter
- 5 -7 cups powdered sugar
- 1 tsp vanilla extract
- 3/4 teaspoon blue spirulina (adjust if needed for more vibrant color)
1/2 teaspoon each of other superfood powders: Carrington Farms Organic Goji Berry Powder, Organic Matcha Powder, Beet Root Powder, and additional turmeric for frosting decoration.
Directions:
- Preheat the oven to 350°F. Spray a cake pan with cooking spray and set aside.
- In a small bowl, combine Carrington Farms Organic Milled Flax Seeds with warm water and let sit until it's thick and has an egg-like texture.
- In a medium bowl, add coconut sugar, Carrington Farms Organic Coconut Oil, vanilla extract, and 2 tsp turmeric (if you're aiming for a more vibrant color and don't mind a slight turmeric taste, you could increase it to 1 tablespoon). Stir until creamy. Add the milk and stir.
- Add the Carrington Farms Organic Cassava Flour, simply tera’s organic whey protein - plain unsweetened and baking soda, and stir until well mixed.
- Divide the cake batter evenly into three 8" pans and bake for 30 minutes or until a toothpick/knife comes out clean from the center of the cake.
- Let the cakes cool before removing from the pans and frosting.
- Whip softened butter and ghee together until smooth, then gradually add powdered sugar until you reach your desired consistency. Set aside 3-4 cups of frosting for the blue layer (this will be used for the main layer and between the cakes), and mix in Spirulina for color.
- Next, divide the remaining frosting into four bowls (approximately 1 cup each). In each bowl, mix in a different Superfood Powder: Carrington Farms Organic Goji Berry Powder, Carrington Farms Organic Matcha Powder, Carrington Farms Beet Root Powder, and Turmeric. You have all your vibrant colored frostings ready to use as desired!
- Place one layer of cake on your serving plate, then spread a layer of blue frosting over the top. Repeat with the remaining layers, alternating cake and blue frosting, until all three layers are stacked.
- Frost the entire outside of the cake with the remaining blue frosting, smoothing it out with a spatula.
- Decorate the cake using the superfood colored frostings. Use piping bags to create decorative designs or add accents as desired.

Test the Colors: Since the potency of natural colors like turmeric and spirulina can vary, it's a good idea to make a small test batch of the frosting to see how the colors develop before preparing the full amount.
Adjust Gradually: Add turmeric and spirulina in smaller increments to avoid overpowering the cake and frosting with their flavors.
