Chicken Parmesan Pizza

This gluten-free, low-carb pizza recipe uses our Keto Bread Mix to create an easy base for a savory mix of toppings, including crunchy chicken coated with our Keto Bread Crumbs

Directions:

  1. To make the dough, combine Carrington Farm Keto Bread Mix, warm water, and Carrington Farms Organic Coconut Cooking Oil in the bowl of a stand mixer fitted with the dough hook attachment. Knead on medium-low speed for 5-10 minutes, until the dough is smooth and begins to come together in a ball around the dough hook. Scrape the dough off of the hook and cover the bowl with a damp towel. Proof for 2 hours, until the dough is puffy and doubled in size. 

  2. After the first proof, remove the dough from the bowl and roll it out into a 12” round circle. Place the dough on a pizza pan and cover again. Let proof for another 2 hours. 

  3. While the dough is proofing, preheat the oven to 400° F and line a small sheet tray with parchment paper. 

  4. Place the Carrington Farms Keto Bread Crumbs in one bowl and the egg in another. Season each with 1/2 teaspoon of kosher salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon of Italian seasoning. Whisk to combine and beat the egg. 

  5. Dip each chicken tender into the egg mixture and then dredge in the Keto Bread Crumbs, fully coating each piece. Transfer them to the prepared sheet pan and spray the tops of the breaded tenders with Carrington Farms Ghee Cooking Spray. 

  6. Bake for 15-20 minutes, until golden brown and crispy and chicken is cooked through. Let cool and then chop into pieces. 

  7. Spread a layer of marinara sauce over the surface of the pizza dough, followed by the mozzarella cheese. Sprinkle the chopped chicken in an even layer over the top and then top with the parmesan cheese. Sprinkle the remaining 1/2 tsp of Italian seasoning over the pizza, brush the edges of the crust with the melted Carrington Farms Organic Ghee and sprinkle with the remaining 1/4 tsp of salt. 

  8. Bake for 15-18 minutes, until the crust is golden and the cheese is bubbly and melted.
