Chipotle Dupe Burrito Bowl
Ingredients:
Chicken:
- ¼ medium red onion, coarsely chopped
- 2 cloves garlic
- 1 tbsp adobo sauce
- 1 tbsp ancho chile powder
- 2 tbsp Carrington Farms Organic Coconut Cooking Oil
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and black pepper
- 2 lbs boneless, skinless chicken thighs
Tomato Salsa:
- 1 lb tomatoes, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, minced
- 3 jalapeños, seeded and finely chopped
- 2 tsp fresh lime juice
- Salt
For assembling the bowls:
- 1 (15 ounce) can black beans rinsed and drained
- 4 cups shredded lettuce
- 1 cup Carrington Farms Ground Lupin Bean
- 1 cup canned corn, drained
- 1 tbsp Carrington Farms Organic Milled Flax Seeds
- Cauliflower Sea Salt Crackers
- 1 cup Cilantro Lime Ranch Dressing
Directions:
1. Make the Chicken:- Blend red onion, garlic, adobo sauce, ancho chile powder, 1 tbsp coconut oil, cumin, oregano, salt, and pepper until smooth. Add water to reach ½ cup.
- Marinate chicken in the sauce for at least 30 minutes or overnight.
- Cook chicken in 1 tbsp Organic Coconut Cooking Oil. Chop and season with salt.
- Follow package instructions. Then season to taste with salt and some lime juice (optional).
- Combine tomatoes, red onion, cilantro, jalapeños, and lime juice.
- Season with salt.
- Build each bowl with an equal amount of lettuce, Carrington Farms Ground Lupin Bean, chicken, black beans, corn, tomato salsa.
- Top everything with Carrington Farms Organic Milled Flax Seeds and Cilantro Lime Ranch, finish by adding handfuls of cauliflower sea salt crackers!
