Fruit, Veggie and Nut Breakfast Bread
Dry Ingredients:
- 2 cups of Carrington Farms Gluten Free Flour with Fiber
- 1 cup oats (regular or gluten free)
- 1 cup Carrington Farms Organic Flax Chia Blend
- 1 tbsp baking powder
- 1 tbsp cinnamon
- 1 tsp ground cardamom
- ¼ tsp sea salt
Wet Ingredients:
- ½ cup Carrington Farms Almond Cooking Oil
- ½ cup pure maple syrup
- ½ cup almond milk
- 2 tsp pure vanilla extract
Mix in's:
- Carrington Farms Coconut Oil Cooking Spray
- 1 cup mixed fresh berries (blueberries and blackberries)
- 1 cup finely chopped baby spinach
- 1 cup finely grated carrots
- 1 medium sized apple, shredded
- ¼ cup raisins
- ¼ cup cranberries
- ¼ cup dried cranberries
- ¼ cup of a mix of sunflower & pumpkin seeds
- Carrington Farms Organic Chia Seeds, sprinkled on top
- 1 Scoop of Simply Tera’s Organic Plain Whey Protein Powder
Directions:
- Prepare a 5 x 9 inch loaf pan with Carrington Farms Gluten Free Baking Spray and preheat your oven to 375F.
- Whisk together dry ingredients in a large mixing bowl. In a separate bowl, mix together wet ingredients then add to dry ingredients until well combined.
- Fold in your Mix in’s.
- Place batter into a loaf pan and bake for 45 minutes or until the toothpick test comes out clean.
- Let cool for 10 minutes then remove loaf from the pan and transfer to a baking rack to cool completely.
