Ground Lupin Stuffing

This gluten-free, keto-friendly recipe is high protein, low carb, and quick and easy to make.


  • 2/3 cup Carrington Farms Ground Lupin Bean
  • 1 cup water
  • 2 tbsp Carrington Farms Organic Ghee
  • 2 carrots, diced
  • 3 stalks of celery, diced
  • 1/2 of a yellow onion, diced
  • 3 cloves of garlic, chopped
  • 1 tsp kosher salt 
  • 1/2 tsp black pepper
  • 1 sprig fresh sage, roughly chopped
  • 1 sprig fresh thyme, roughly chopped
  • 1 sprig fresh rosemary, roughly chopped
  • 1 sprig fresh oregano, roughly chopped


  1. Cook Carrington Farms Ground Lupin Bean in 1 cup of water according to package instructions. Set aside. 
  2. Heat Carrington Farms Organic Ghee in a large sauté pan over medium heat. When the ghee is hot, add the diced carrots, diced celery, and diced onion. Season with ½ teaspoon of kosher salt and cook for 5-6 minutes, until the veggies begin to soften. 
  3. Add the garlic to the pan and continue cooking for another 5 minutes. Stir in the Carrington Farms Ground Lupin, season with the remaining ½ teaspoon of salt and black pepper. Cook, stirring occasionally, for about 10 minutes, until the liquid has been absorbed and flavors have melted. 
  4. Combine all of the herbs and add half of them to the lupin stuffing. Cook for another minute and then remove from heat. Garnish with the rest of the herbs just before serving.
