Pear and Lupin Breakfast Bake
This protein-packed recipe makes it easy to start each day feeling nourished no eggs or meat necessary.
Ingredients:
- 1/2 cup Carrington Farms Ground Lupin Bean
- 1/2 cup Canned Pears (drained and mashed)
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 tbsp honey
- 1 tsp vanilla extract
Topping:
- 1/4 cup Carrington Farms Organic Milled Flax seed
- 1 tbsp coconut sugar
- 1 tbsp Carrington Farms Organic Ghee
Directions:

Preheat the oven at 350ºF.

Combine the first six ingredients together in a bowl - the mixture will be very wet.

Grease a 9x11 or 8x8 baking dish with Carrington Farms Organic Ghee. Pour in lupin mixture.

Cover the baking dish and cook for 60-65 minutes, until the lupin mixture is almost completely baked through.

While the lupin bake is in the oven, combine the final three ingredients.

After 60-65 minutes, remove the cover and drizzle topping evenly over the top.

Place back in the oven, uncovered, and bake for a final 15-20 minutes.

Remove from the oven and serve warm!
