Protein Tomato Soup with Grilled Cheese
Ingredients:
For the spicy protein tomato soup:
- 2 ½ lbs cherry tomatoes whole
- 5 cloves garlic, still in peel
- 1 tbsp Carrington Farms Organic Ghee
- 1 medium onion, chopped
- 1 habanero pepper, diced (optional, add if you want your soup to have a spicy kick!l)
- 2 cups vegetable broth
- 1 cup milk
- 2 scoops simply tera’s lactose free organic whey protein, plain unsweetened
- 1 cup cooked Carrington Farms Plain Ground Lupin Bean
- 3 sprigs fresh thyme (leaves removed)
- ½ tsp fresh rosemary
- salt and pepper to taste
For the provolone grilled cheese with organic ghee:
- fresh baked rye bread (or bread of choice)
- Carrington Farms Organic Ghee
- sliced provolone cheese (or cheese of choice)
Directions:
For the protein tomato soup:
- Preheat the oven to 350 degrees.
- Place halved tomatoes and garlic in peel on a foil-covered baking sheet lightly brushed with oil. Lightly brush a little bit more oil over tomatoes and garlic. Roast for about 25 minutes, until the tomatoes are getting wrinkled.
- Put onion, diced habanero (optional), and fresh herbs in a large stockpot with 1 tablespoon of Carrington Farms Organic Ghee. Sauté for about 5 minutes, until the onion is translucent.
- Remove peels from garlic and add roasted garlic and tomatoes to the stockpot. Add vegetable stock and using an immersion blender, blend until soup is smooth. Alternatively, you can put the soup in a blender and puree until smooth.
- Whisk together simply tera’s organic lactose free plain unsweetened whey protein powder with milk and combine into the soup. Let soup simmer for about 20 minutes, until thickened.
- While the soup is heating, cook Carrington Farms Group Lupin Bean and then combine it into the soup.
- Turn on low while you prepare the grilled cheese.
For the provolone grilled cheese with organic ghee:
- Coat two pieces of rye bread with Carrington Farms Organic Ghee. Place ghee side down onto a skillet and top with several slices of provolone cheese in the middle of the bread.
- Toast each side for about 2 - 3 min on low medium heat until golden brown and the cheese is melty.
- Top soup with fresh herbs, salt and pepper to taste, and serve with a fresh ghee grilled cheese sandwich. enjoy!
