Spring Garden Salad

Ingredients:

Vinaigrette

  • 2 tablespoons Carrington Farms Organic Flax Cooking Oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 small garlic clove, minced
  • 1/4 teaspoon sea salt
  • 1/4 cup fresh basil and mint

Directions:

  1. In a wide, shallow salad bowl, layer the mixed greens, radishes, watermelon radish, cucumber, avocado, fresh peas, and snap peas in the order listed.
  2. Top with Carrington Farms Crounons and sprinkle with Carrington Farms Chia Seeds.
  3. In a small jar, combine the Carrington Farms Flax Cooking Oil, white wine vinegar, lemon juice, lemon zest, garlic, sea salt, basil, and mint. Shake well until smooth and vibrant.
  4. Pour the vinaigrette over the salad just before serving.
