Spring Matcha & Berry Yogurt Parfaits

We are looking forward to Spring time with this delicious and colorful matcha and berry parfait.
Ingredients:
Matcha Yogurt
- 1 tsp Carrington Farms Organic Matcha Powder
- 1 tbsp warm water (for blooming)
- 1 cup plain yogurt (coconut or dairy)
- 1–2 tsp honey or maple syrup (to taste)
- Pinch of flaky salt (optional)
Pistachio Hemp Crunch
- 2 1/2 tbsp pistachios, roughly chopped
- 1 tbsp hemp seeds
- 2 1/2 Tbsp shredded coconut
Coconut drizzle
- 1 Tbsp melted Carrington Farms Coconut Oil
- 1 tsp honey
Fruit
- 3–4 strawberries, sliced vertically
- ¼ cup blueberries
Directions:
- In a small bowl, whisk the matcha with warm water until smooth and lump-free.
- Stir the bloomed matcha into the yogurt. Add honey (or maple), mixing until smooth and lightly sweetened.
- Combine chopped pistachios, hemp seeds, and coconut oil and set aside
- Combine the coconut oil and honey and melt in the microwave in 10 second increments. Whisk to combine.
- Press strawberry slices against the inside of a clear glass or jar.
- Spoon in a layer of matcha yogurt.
- Add a layer of pistachio hemp crunch.
- Drizzle half the coconut oil and honey mixture.
- Scatter in blueberries.
- Add another layer of matcha yogurt.
- Top with extra pistachio hemp crunch, berries and the remaining coconut drizzle.
