Spring Matcha & Berry Yogurt Parfaits

We are looking forward to Spring time with this delicious and colorful matcha and berry parfait.

Ingredients:

Matcha Yogurt

  • 1 tsp Carrington Farms Organic Matcha Powder
  • 1 tbsp warm water (for blooming)
  • 1 cup plain yogurt (coconut or dairy)
  • 1–2 tsp honey or maple syrup (to taste)
  • Pinch of flaky salt (optional)

Pistachio Hemp Crunch

  • 2 1/2 tbsp pistachios, roughly chopped
  • 1 tbsp hemp seeds
  • 2 1/2 Tbsp shredded coconut

Coconut drizzle

Fruit

  • 3–4 strawberries, sliced vertically
  • ¼ cup blueberries

Directions:

  1. In a small bowl, whisk the matcha with warm water until smooth and lump-free.
  2. Stir the bloomed matcha into the yogurt. Add honey (or maple), mixing until smooth and lightly sweetened.
  3. Combine chopped pistachios, hemp seeds, and coconut oil and set aside 
  4. Combine the coconut oil and honey and melt in the microwave in 10 second increments. Whisk to combine.
  5. Press strawberry slices against the inside of a clear glass or jar.
  6. Spoon in a layer of matcha yogurt. 
  7. Add a layer of pistachio hemp crunch. 
  8. Drizzle half the coconut oil and honey mixture.
  9. Scatter in blueberries. 
  10. Add another layer of matcha yogurt.
  11. Top with extra pistachio hemp crunch, berries and the remaining coconut drizzle.
