Summer Swirl Superfood Pops

Cool off with these Summer Swirl Superfood Popsicles, which have antioxidants, Omega 3s, and fiber.
Ingredients:

 

Pink Layer:

Purple Layer:

  • ½ cup light coconut milk (or any plant milk)
  • ¾ cup blueberries (frozen produces better purple color)
  • 3 tbsp Carrington Farms Organic Chia Seeds
  • ½ tbsp maple syrup
  • shredded coconut, optional

Directions

  1. In a blender, blend all ingredients for the pink layer until smooth. Pour the mixture into 8 popsicle molds. Set aside. Rinse the blender.
  2. Now blend all ingredients for the purple layer until smooth. Pour this mixture over the pink layer. Using a popsicle stick, swirl the purple layer a bit so it creates a swirly effect with the pink layer. Sprinkle a layer of shredded coconut over each popsicle. Insert the popsicle sticks.
  3. Freeze for 4-5 hours or until frozen.
