Vegetable Noodles
Twist your favorite vegetables into noodles and pair with your favorite sauce for an added flavor.
Ingredients:
- 1 Butternut squash
- 1 Beet
- 1 Cucumber
- 1 Carrot
- 1 Sweet Potato
- 1 Zucchini
- Carrington Farms Coconut Oil Cooking Spray
- Kosher Salt
- Black Pepper
Directions:
To make the vegetable noodles:
- For the butternut squash, trim off the round, seeded bottom of the squash. Peel the skin from the long neck of the squash and use a spiralizer to make noodles.
- For the beet, peel the beet and then use a spiralizer to make noodles.
- For the cucumber, use a spiralizer or a peeler with a julienne-blade attachment to make noodles.
- For the carrot, peel the carrot and use a spiralizer or a peeler with a julienne-blade attachment to make noodles.
- For the sweet potato, peel the skin from the sweet potato and use a spiralizer to make noodles.
- For the zucchini, use a spiralizer to make noodles, no need to peel.
Cooking the vegetable noodles:
- Preheat a skillet over medium heat.
- Spray vegetable noodles generously with Carrington Farms Coconut Oil Cooking Spray and season with salt and pepper.
- Cook, tossing or stirring frequently for about 5 minutes, just until vegetables are softened but not yet mushy.
- Serve vegetable noodles with your favorite sauce or toppings.
