Wild Rice Soup

wild rice soup

Ingredients:

  • 32 oz vegetable broth
  • 3 tbsp Carrington Farms Organic Flax Cooking Oil
  • 1 cup sliced mushrooms
  • 1 tsp Carrington Farms Mushroom Powder
  • 2 garlic cloves minced
  • 1/4 cup chopped onions
  • 1/2 cup chopped celery 
  • 1/2 cup chopped carrots
  • 1 cup chopped sweet potatoes
  • 16 oz unsweetened  coconut milk
  • 1/2 cup nutritional yeast
  • 1/2 cup chopped kale
  • 3 sprigs of fresh thyme
  • 2 tbsp salt
  • 2 packets of Reese Minnesota Wild Rice

Directions:

  1. Prep and chop all veggies
  2. In a large pot, combine 2 tbsp Carrington Farms Organic Flax Cooking Oil with garlic, mushrooms, and Carrington Farms Mushroom Powder, and cook down for 3 - 5 minutes.
  3. Add all chopped veggies except the kale (onions, celery ,carrots, sweet potatoes) and add another tbsp of Carrington Farms Organic Flax Cooking Oil to the pot.
  4. Cook for 5 minutes until the onion becomes fragrant.
  5. Add the vegetable broth, coconut milk, Reese Wild Rice, kale, thyme, salt,  cover the pot with a lid and simmer until the rice and potatoes are fully cooked (about 30 min).
  6. Serve with salt and pepper and enjoy!
