Wild Rice Soup

Ingredients:
- 32 oz vegetable broth
 - 3 tbsp Carrington Farms Organic Flax Cooking Oil
 - 1 cup sliced mushrooms
 - 1 tsp Carrington Farms Mushroom Powder
 - 2 garlic cloves minced
 - 1/4 cup chopped onions
 - 1/2 cup chopped celery
 - 1/2 cup chopped carrots
 - 1 cup chopped sweet potatoes
 - 16 oz unsweetened coconut milk
 - 1/2 cup nutritional yeast
 - 1/2 cup chopped kale
 - 3 sprigs of fresh thyme
 - 2 tbsp salt
 - 2 packets of Reese Minnesota Wild Rice
 
Directions:
- Prep and chop all veggies
 - In a large pot, combine 2 tbsp Carrington Farms Organic Flax Cooking Oil with garlic, mushrooms, and Carrington Farms Mushroom Powder, and cook down for 3 - 5 minutes.
 - Add all chopped veggies except the kale (onions, celery ,carrots, sweet potatoes) and add another tbsp of Carrington Farms Organic Flax Cooking Oil to the pot.
 - Cook for 5 minutes until the onion becomes fragrant.
 - Add the vegetable broth, coconut milk, Reese Wild Rice, kale, thyme, salt, cover the pot with a lid and simmer until the rice and potatoes are fully cooked (about 30 min).
 - Serve with salt and pepper and enjoy!
