Almond Butter Ice Cream Sandwiches

These almond butter ice cream sandwiches are not only gluten free, but lactose free too.

Ingredients:

Directions:
  1. Cream ghee, almond butter, vanilla and sugars together in a bowl.
  2. In a separate bowl, sift coconut flour. Add baking powder, baking soda, eggs, and salt. Whip the egg whites and fold into the flour mixture.
  3. Stir the flour mixture into the butter mixture. Mix well. Put dough into the refrigerator for an hour.
  4. Using a tablespoon, roll dough into balls, and put on cookie sheet. Flatten each ball with a fork. Bake in preheated oven for 10-12 minutes.
  5. Let cookies cool. Add a scoop of ice cream on top of one cookie. Top with another cookie and enjoy!
