Almond Butter Ice Cream Sandwiches
These almond butter ice cream sandwiches are not only gluten free, but lactose free too.
Ingredients:
- 1 cup Carrington Farms Organic Coconut Oil and Ghee
- 1 cup Almond Butter
- 1 cup White Sugar
- 1 cup Packed Brown Sugar
- 3 Eggs
- 1 cups Carrington Farms Coconut Flour
- 1 tsp Baking Powder
- ½ tsp Salt
- 1 ½ tsp Baking Soda
- 1/3 tsp Vanilla Extract
- Ice Cream Flavor of Choice
- Cream ghee, almond butter, vanilla and sugars together in a bowl.
- In a separate bowl, sift coconut flour. Add baking powder, baking soda, eggs, and salt. Whip the egg whites and fold into the flour mixture.
- Stir the flour mixture into the butter mixture. Mix well. Put dough into the refrigerator for an hour.
- Using a tablespoon, roll dough into balls, and put on cookie sheet. Flatten each ball with a fork. Bake in preheated oven for 10-12 minutes.
- Let cookies cool. Add a scoop of ice cream on top of one cookie. Top with another cookie and enjoy!
