Asian Inspired Lupin Bowl

Ingredients:
- 2/3 package firm tofu drained and pressed well to remove water
- 1 tsp Carrington Farms Mustard Seed Cooking Oil
- 1 jar Ty Ling Stir-Fry Corn
- 1 cup peas
- ½ red bell pepper
- ½ cup Carrington Farms Ground Lupin Bean, Plain
- 1 cup of water
For the Sauce:
- 2 tbsp Ty Ling Oyster Sauce
- 1 tbsp rice vinegar
- 1 tsp water
- 1 ½ tbsp agave or maple syrup
- 1/4 tsp garlic powder
- 1 tsp Carrington Farms Mustard Seed Cooking Oil
Directions:
- Cut tofu into thin pieces (approximately 4 in. by 2.5 in.) Add Carrington Farms Mustard Seed Cooking Oil to a large pan and place tofu so the pieces are not overlapping. You may need to do this in 2 batches.
- Cook tofu until lightly browned (depends on thickness) then flip, cook for another 3 minutes.
- Meanwhile, whisk sauce ingredients together in a bowl.
- When tofu is cooked, add sauce, toss to coat. Add vegetables into the pan and stir fry them for about 2 minutes.
- In a microwave safe dish, combine ½ cup of Carrington Farms Ground Lupin Bean Plain with 1 cup of water. Heat on high for 3 minutes.
- Fill your bowl with the Carrington Farms Ground Lupin Bean as the base, then top with the cooked vegetables and tofu. Serve and enjoy!
