Banana Mug Cake
Whether you’re looking for the perfect way to start your day, or craving something sweet in the afternoon, this recipe will make you want to grab your mug and get to mixing.
Ingredients:
- 3 tbsp Carrington Farms Organic Cassava Flour
- 1 tbsp walnuts
- 1 tsp Carrington Farms Organic Chia Seeds
- ¼ tsp baking powder
- 1 Pinch sea salt
- 1 tsp Carrington Farms Organic Ghee
- 1 ½ tbsp unsweetened vanilla almond milk
- 1 tbsp mashed banana
- 1 tbsp pure maple syrup
- 1 tsp chocolate chips, for topping (optional)
Directions:
- In a small microwave/oven safe coffee mug, add Carrington Farms Organic Cassava Flour, walnuts, Carrington Farms Organic Chia Seeds, baking powder, Carrington Farms Organic Ghee and salt, stirring to combine.
- Add the almond milk, mashed banana, and maple syrup and stir again until combined.
- Sprinkle with chocolate chips if desired.
You have two options to bake the mug cake:
Method 1 - Microwave for 50 seconds or until it has risen and fully cooked.
or
Method 2 - Bake in the oven. Preheat the oven to 350 F and bake in an oven safe mug (check bottom of mug for “oven safe” marking). If you don’t have an oven safe mug, use a 3.5-inch oven safe ramekin for 10-15 minutes. Remove and allow to cool for about 5 minutes. Sprinkle some chocolate chips on top and enjoy!
