California Lupin Salad

This salad is the perfect make-ahead meal that features our Ground Lupin Bean, adding fiber and protein with only 1 net carb per serving.

Directions:

  1. Boil 2 cups of water and add 2/3 cup of Carrington Farms Ground Lupin Bean. Boil for 3 minutes and strain. Alternatively, in a large bowl mix 2/3 cup lupin with 2 cups of water (no need to boil) and microwave on high 3 min.

  2. In a large saucepan, heat Carrington Farms Organic Flax Cooking Oil over medium-high heat. Add Carrington Farms Ground Lupin Bean and garlic; cook and stir 2-3 minutes or until lupin is lightly browned. Stir in zucchini and 1 cup of water; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Stir in remaining ingredients, heat through.

  3. Serve warm or let cool and place in mason jars for a delicious and healthy on-the-go snack!
