California Lupin Salad
This salad is the perfect make-ahead meal that features our Ground Lupin Bean, adding fiber and protein with only 1 net carb per serving.
Ingredients:
- 1 tbsp Carrington Farms Organic Flax Cooking Oil
- 2/3 cup Carrington Farms Ground Lupin Bean
- 3 cups water
- 2 garlic cloves, minced
- 1 medium zucchini, chopped
- 3/4 cup canned chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup finely chopped Greek olives
- 2 tbsp minced fresh basil
- 1/4 tsp pepper
Directions:

Boil 2 cups of water and add 2/3 cup of Carrington Farms Ground Lupin Bean. Boil for 3 minutes and strain. Alternatively, in a large bowl mix 2/3 cup lupin with 2 cups of water (no need to boil) and microwave on high 3 min.

In a large saucepan, heat Carrington Farms Organic Flax Cooking Oil over medium-high heat. Add Carrington Farms Ground Lupin Bean and garlic; cook and stir 2-3 minutes or until lupin is lightly browned. Stir in zucchini and 1 cup of water; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Stir in remaining ingredients, heat through.
