Cauli Lupin Tots

This easy, cheesy protein & fiber packed recipe is even tastier than the real thing, fit for the whole family to enjoy!
Ingredients:- 1 head of cauliflower, steamed
- ½ cup Carrington Farms Plain Ground Lupin Bean, cooked according to package instructions
- 1 egg
- ¼ cup diced onion
- 1 clove of garlic
- 1 tsp fresh thyme leaves
- ¼ cup parmesan cheese, grated
- ¼ cup fontina cheese, grated
- ¼ cup almond flour
- 1 tsp kosher salt
- ½ tsp ground pepper
- Carrington Farms Coconut Oil Cooking Spray
- To steam the cauliflower, roughly chop the florets. Place them in a steamer basket set over a pot of boiling water and cook for about 10 minutes, until they are fork tender. Cool completely.
- Preheat the oven to 400° F and line a rimmed sheet tray with parchment paper. Spray the parchment paper with Carrington Farms Coconut Oil Cooking Spray and set aside.
- In the bowl of a food processor fitted with the blade attachment, combine onion, garlic, and thyme leaves. Pulse 2-3 times, until minced.
- Add the cauliflower to the food processor and continue to pulse until a fine meal forms. Transfer the mixture to a large bowl.
- Add the cheeses, almond flour, Carrington Farms Plain Ground Lupin Bean, salt, and pepper. Stir to combine.
- Lightly beat the egg in a small bowl and then add it to the mixture. Stir until everything is well-mixed and then chill for 10 minutes.
- Use a 1 ½ teaspoon sized cookie scoop to portion out the tots onto your prepared sheet tray. Use your fingers to gently press the edges into a rectangular tater tot shape. Spray with coconut oil and bake for 15-17 minutes, until the bottoms are golden brown. Flip each tot and then continue to bake for about 10 minutes, until brown all over. Remove from the oven and serve.
