Cheesy Chicken Fritters

Ingredients:
For the Chicken Fritters (Serves 6):
- 3 large chicken breasts, finely diced
 - 1/3 cup mayonnaise
 - 2 large eggs
 - 1/3 cup flour
 - 1 1/3 cups grated parmesan cheese
 - 1/4 cup fresh parsley, chopped
 - 3 green onions, sliced
 - 1 tsp salt
 - 1/4 tsp black pepper
 - 1/2 tsp onion powder
 - 1/2 tsp garlic powder
 - 1/2 tsp sweet paprika
 - 2 Tbsp Carrington Farms Organic Coconut Cooking Oil
 
For the Holy Basil-Infused Ground Lupin Bean Side (Serves 6):
- 1 package Carrington Farms Ground Lupin Bean
 - 1-2 tbsp Carrington Farms Holy Basil Seeds
 - 1 tsp pink Himalayan salt
 - 2 cups water
 
Directions:
For the Chicken Fritters:
- Finely dice the chicken breasts and place them in a large mixing bowl.
 - Add the mayonnaise, eggs, flour, Cello grated Parmesan cheese, parsley, green onions, salt, black pepper, onion powder, garlic powder, and sweet paprika. Mix until well combined.
 - Cover the bowl with plastic wrap and refrigerate the mixture for at least 20 minutes to allow the flavors to meld.
 - Heat a large non-stick pan over medium heat and add 2 tbsp of Carrington Farms Organic Coconut Cooking Oil.
 - Once the oil is hot, scoop heaping tablespoons of the chicken mixture into the pan, pressing down slightly to form a fritter shape.
 - Cook each fritter for 4-5 minutes per side, or until golden brown and fully cooked through (internal temperature of 165°F).
 - Repeat until all the fritters are cooked, adding more coconut oil if necessary.
 - Serve hot with a side of garlic herb aioli and the basil-infused Lupin Bean.
 
For the Basil-Infused Ground Lupin Bean Side:
- Combine the Carrington Farms Ground Lupin Bean, Carrington Farms Holy Basil Seeds, pink Himalayan salt, and 2 cups of water in a large microwave-safe bowl.
 - Stir well and microwave according to the package instructions.
 - For larger servings or leftovers, prepare the entire packet. Follow package directions for smaller portions.
