Spring Grilled Asparagus

Ingredients:
(serves 4)
- 2 bunches green asparagus
- 2 tbsp Carrington Farms Organic Coconut Cooking Oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Vinaigrette:
- 2 tbsp Carrington Farms Organic Coconut Cooking Oil
- 2 tsp Carrington Farms Organic Milled Flax Seeds
- 2 tbsp fresh lemon juice
- 1 tsp mustard
- 1 tsp honey
Directions:
- Wash, dry, and trim the ends of the asparagus then drizzle with Carrington Farms Organic Coconut Cooking Oil and season with salt and black pepper. Toss to coat evenly then grill outdoors or on a grill skillet until tender on both sides.
- To make the vinaigrette, add the Carrington Farms Organic Coconut Cooking Oil, Carrington Farms Organic Milled Flax Seeds, fresh lemon juice, mustard, and honey to a jar with a tight lid. Seal and shake until emulsified.
- Serve the grilled asparagus on a platter then drizzle with the vinaigrette and garnish with a bit more Carrington Farms Organic Milled Flax Seeds.
