Chocolate Avocado Baked Mochi Donut

These springy, soft, sweet treats are made with our Organic Coconut Cooking Oil to make each bite flawlessly moist, and our gluten-free Cassava Flour to add key vitamins and minerals.


Optional Icing:

    1. Preheat your oven to 350°F. Grease a donut pan with Carrington Farms Organic Coconut Cooking Oil or use a silicone donut pan for easier removal.
    2. In a large mixing bowl, whisk together Carrington Farms Organic Cassava Flour, cacao powder, coconut sugar, baking powder, baking soda, and salt.
    3. In a separate medium-sized mixing bowl, mash the ripe avocado until smooth. Whisk in the Carrington Farms Organic Coconut Cooking Oil, eggs, almond milk, and vanilla extract.
    4. Add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, as this can result in a denser donut.
    5. Transfer the donut batter into a piping bag or a large ziplock bag with the corner cut off. Pipe the batter evenly into the prepared donut pan, filling each cavity about 2/3 full.
    6. Bake for 15-20 minutes, or until a toothpick inserted into a donut comes out clean. Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

    For the Icing:

    1. Drizzle Carrington Farms Organic Coconut Cooking Oil over 1/2 cup of powdered sugar and stir well until a smooth paste is formed.
    2. Pulse 3 tbsp of freeze-dried strawberries in a blender until they become powderized and then add them to your icing.
    3. Top your Donuts with the icing and enjoy!
