Chocolate Avocado Baked Mochi Donut
These springy, soft, sweet treats are made with our Organic Coconut Cooking Oil to make each bite flawlessly moist, and our gluten-free Cassava Flour to add key vitamins and minerals.
Ingredients:
- 1 1/2 cups Carrington Farms Organic Cassava Flour
- 1/2 cup unsweetened cacao powder
- 1/2 cup coconut sugar or sweetener of choice
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup mashed ripe avocado (about 1 medium avocado)
- 1/4 cup Carrington Farms Organic Coconut Cooking Oil
- 2 large eggs
- 3/4 cup almond milk or any other milk of choice
- 1 tsp pure vanilla extract
- 1/3 cup Carrington Farms Organic Coconut Cooking Oil
- 1/2 cup vegan powdered sugar
- 3 tbsp of freeze-dried strawberries
Directions:
- Preheat your oven to 350°F. Grease a donut pan with Carrington Farms Organic Coconut Cooking Oil or use a silicone donut pan for easier removal.
- In a large mixing bowl, whisk together Carrington Farms Organic Cassava Flour, cacao powder, coconut sugar, baking powder, baking soda, and salt.
- In a separate medium-sized mixing bowl, mash the ripe avocado until smooth. Whisk in the Carrington Farms Organic Coconut Cooking Oil, eggs, almond milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, as this can result in a denser donut.
- Transfer the donut batter into a piping bag or a large ziplock bag with the corner cut off. Pipe the batter evenly into the prepared donut pan, filling each cavity about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into a donut comes out clean. Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
For the Icing:
- Drizzle Carrington Farms Organic Coconut Cooking Oil over 1/2 cup of powdered sugar and stir well until a smooth paste is formed.
- Pulse 3 tbsp of freeze-dried strawberries in a blender until they become powderized and then add them to your icing.
- Top your Donuts with the icing and enjoy!
