Copycat Panera Autumn Squash Soup

Ingredients (makes 6 servings):
- 2 tbsp Carrington Farms Organic Coconut Cooking Oil
 - 1/2 cup onion, diced
 - 2 garlic cloves, minced
 - 1 butternut squash, peeled and cubed
 - 2 large carrots, peeled and diced
 - 1/2 tsp ground cinnamon
 - 1 tbsp salt
 - 1/2 tsp freshly cracked black pepper
 - 32 oz Bare Bones Organic Chicken Bone Broth
 - 15 oz canned pure pumpkin puree
 - 2 tbsp coconut sugar
 - 7 oz canned unsweetened coconut milk
 - 2 scoops simply tera's organic whey protein, plain unsweetened
 - 4.75 oz package of Carrington Farms Organic Garlic & Parmesan Crounons
 - 2 tbsp pumpkin seeds, optional
 
Directions:
- Heat a large bottom-heavy soup pot on medium-high heat and add the Carrington Farms® Organic Coconut Cooking Oil. Next, add the onion, carrot, and butternut squash. Sauté for 3-4 minutes, stirring occasionally.
 - Now add the minced garlic, cinnamon, salt, and black pepper. Stir to toast the spices.
 - Add Bare Bones® Organic Chicken Bone Broth and bring to a simmer, then add the pure pumpkin puree. Stir to combine, then cover and simmer on medium heat until the butternut squash and carrots are fully cooked and fork-tender, about 10 minutes.
 - Turn off the heat and blend the soup using a hand-held immersion blender or a high-speed blender (in batches) until smooth.
 - Lastly, add coconut sugar, Simply Tera's® organic Plain Unsweetened Whey Protein Powder, and coconut milk. stir well to combine. taste and adjust seasoning if needed.
 - To serve, top the soup with Carrington Farms® Organic Garlic & Parmesan Crounons and pumpkin seeds.
