Mushroom Stuffing

Ingredients:
- 4 tbsp Carrington Farms Organic Coconut Cooking Oil
 - 1 pound mushrooms
 - 2 tbsp of Carrington Farms Mushroom Powder
 - 1 cup of Carrington Farms Ground Lupin Bean
 - 1 package of Carrington Farms Organic Crounons, Garden Herb
 - 1 cup of yellow onion, diced
 - 1 cup of diced celery
 - 1 tbsp of minced garlic
 - 2 tbsp of finely minced fresh sage
 - 1 tbsp of finely minced fresh thyme leaves
 - 1 tbsp of pure maple syrup
 - 2 of rich broth or stock
 
Directions:
- Preheat the oven to 350°F.
 - Chop the mushrooms into very small pieces by hand. Heat the Carrington Farms Organic Coconut Cooking Oil in a large deep pot over medium heat, then add the mushrooms. Cook,stirring often, until the liquid has evaporated and they are starting to brown, 5 to 8 minutes.
 - Stir in the onions, celery, garlic, sage, thyme and Carrington Farms Mushroom Powder.
 - Cook, stirring often, until the onions have softened and smell sweet, about 5 minutes. Add the maple syrup, Carrington Farms Ground Lupin Bean and season with salt and pepper.
 - Take the pot off the heat and stir in the broth.
 - Transfer the stuffing mixture to a lightly greased baking dish. Cover with foil and bake for 20 minutes.
 - At the very end stir in the Carrington Farms Organic Crounons Garden Herb.
