Corn Fritters
Ingredients:
- 2½ cups corn kernels
- 1¼ cup Carrington Farms Gluten Free Flour With Fiber
- ½ cup vegan cheddar shreds
- ¼ cup chopped scallions
- 1 teaspoon sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- 2 tablespoons Carrington Farms Organic Milled Flax Seeds
- ½ cup non-dairy milk
- Carrington Farms Organic Coconut Cooking Oil, for frying
Directions:
- In a large bowl, combine the corn kernels, Carrington Farms Gluten Free Flour With Fiber, vegan cheddar cheese shreds, scallions, sugar, baking powder, salt, garlic powder, and Carrington Farms Organic Milled Flax Seeds. Add the non-dairy milk and mix until a thick batter forms. Set aside.
- Coat the bottom of a large frying pan or skillet with Carrington Farms Organic Coconut Cooking Oil and warm the oil over medium heat until hot . Get a wire rack or a paper towel-lined plate ready for the finished fritters.
- Scoop about 4 tablespoons (¼ cup) of batter onto the hot pan, forming the fritter into a circular shape (this doesn’t have to be perfect!). Cook until the fritters are golden brown on the first side, about 2-3 minutes. Flip and cook on the second side for an additional couple of minutes until browned and cooked through.
- Transfer the cooked fritters to a wire rack or paper towel-lined plate and immediately sprinkle with salt for extra flavor.
- Serve warm: Enjoy these easy corn fritters while warm with your favorite dipping sauce. Enjoy!
