Grilled Summer Vegetables With Flax Lemon Dressing
Zesty, nutty, and full of Omega 3-s, Carrington Farms Organic Flax Cooking Oil makes the best Lemon Flax Oil Vinaigrette to give your veggies that special taste.
Ingredients:
- 5 tbsp Carrington Farms Organic Flax Cooking Oil, divided
- 1 Zucchini Squash
- 1 Yellow Squash
- 1 Red Onion
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 8 Green Asparagus
- Fresh Basil Leaves, for garnish
- 2 tbsp Lemon Juice
- 1 tsp Mustard
- 1 tsp Honey
- 2 tsp Sea Salt
- 1 tsp Black Pepper
Directions:
- Heat a grill to medium heat and wash and cut the vegetables into desired shape.
- Lightly toss the cut vegetables with 1-2 Tablespoons of Carrington Farms Organic Flax Cooking Oil and season with sea salt and black pepper. Grill on each side for 3-5 minutes or until lightly charred then place onto a serving platter.
- To a small jar, add the Carrington Farms Organic Flax Cooking Oil and the remaining vinaigrette ingredients, then seal tight with a lid and shake well until emulsified.
- Pour the lemon flax oil vinaigrette over the grilled veggies and garnish with fresh basil leaves.
