Grilled Summer Vegetables With Flax Lemon Dressing

  • 5 tbsp Carrington Farms Organic Flax Cooking Oil, divided
  • 1 Zucchini Squash
  • 1 Yellow Squash
  • 1 Red Onion
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 8 Green Asparagus
  • Fresh Basil Leaves, for garnish
  • 2 tbsp Lemon Juice
  • 1 tsp Mustard
  • 1 tsp Honey
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper


  1. Heat a grill to medium heat and wash and cut the vegetables into desired shape.
  2. Lightly toss the cut vegetables with 1-2 Tablespoons of Carrington Farms Organic Flax Cooking Oil and season with sea salt and black pepper. Grill on each side for 3-5 minutes or until lightly charred then place onto a serving platter.
  3. To a small jar, add the Carrington Farms Organic Flax Cooking Oil and the remaining vinaigrette ingredients, then seal tight with a lid and shake well until emulsified.
  4. Pour the lemon flax oil vinaigrette over the grilled veggies and garnish with fresh basil leaves.
