Keto Blueberry Bread

 This low-carb, Keto Blueberry Loaf is perfect for both breakfast or snack and is a nutritious bake when made with our Keto Bread Mix – which has fiber, protein and no added sugar.


For the blueberry bread:

For the glaze: 

  • 1 cup powdered sugar
  • 2 tbsp melted butter
  • 1 tsp lemon juice
  • 2-3 tbsp heavy cream
  • 1/4 cup blueberries, for topping


  1. Preheat the oven to 350° F and spray the bottom and sides of a 9x5” loaf pan with Carrington Farms Ghee Cooking Spray. Set aside.

  2. In a large bowl, whisk together Carrington Farms Keto Bread Mix, baking powder, salt, lemon zest, and sugar. 

  3. In a large measuring cup, whisk together Carrington Farms Organic Coconut Cooking Oil, yogurt, and eggs. 

  4. Add the wet ingredients into the bowl with the dry ingredients and whisk until the batter is smooth and no dry spots remain. 

  5. Gently fold in the blueberries and then transfer the batter to the prepared loaf pan. 

  6. Bake for 40-45 minutes, until deeply browned and a cake tester inserted in the middle comes out clean. Let cool completely in the pan. 

  7. To make the glaze, whisk together powdered sugar, melted butter, and lemon juice. Stream in heavy cream 1 tablespoon at a time until glaze is smooth and reaches your desired consistency.

  8. Pour the glaze over the cooled bread and top with fresh blueberries.
