Keto Peppermint Chocolate Cookies
Ingredients:
- 3 large eggs, room temperature
- 1/3 cup Carrington Farms Organic Ghee
- 3/4 cup granulated keto sweetener
- 2 tbsp milk, room temperature
- 1/2 tsp pure vanilla extract
- 1/2 tsp peppermint extract
- 1/2 cup unsweetened cocoa powder
- 3/4 cup Carrington Farms Gluten Free Flour with Fiber
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup keto mini marshmallows
- 1 cup keto white chocolate baking chips
Directions:
- Preheat the oven to 325°F and prepare a baking sheet with parchment paper or silicone baking mat.
- To a large bowl add the eggs, Carrington Farms Organic Ghee, granulated keto sweetener, and milk. Whisk until well combined.
- Next, add the vanilla and peppermint extract and whisk again.
- To the bowl, add cocoa powder, Carrington Farms Gluten Free Flour with Fiber, baking powder, and salt. Whisk until all of the dry bits are absorbed.
- Switching to a spatula, fold in the keto mini marshmallows and keto white chocolate chips.
- Using a cookie scoop or large spoon, spoon evenly sized cookie batter onto the prepared baking sheet.
- Bake at 325°F for 10-12 minutes then allow to cool before serving.
